This pasta is produced using semolina of Senatore Cappelli durum wheat organically grown in Puglia, and more precisely in the Altamura countryside. It stands out tall and stately in the fields, as the plants may reach a height of up to 180 cm. This characteristic has made it difficult to grow because it is at a constant risk of being flattened (beaten down by wind and rain).
In any case it is to be considered an "elect" variety both because it has exceptional protein and sensory characteristics and because it is the forerunner of many other varieties still grown today. The Alce Nero Senatore Cappelli pasta range features four products typical of the regional tradition: mezze maniche rigate, girandole, orecchiette and trofie; the dough is bronze extruded and dried at 50°C for 24 hours.
